I have been given the opportunity to leave a job I hate to work at another job. Same hours same pay. Will this effect my trust deed?
I’m also looking into opening my own cafe, my dad is willing to pay for all the start up costs and I wouldn’t need to pay him back until after the trust deed is over and done with. How would this work with being in a trust deed?

Switching jobs will not affect your trust deed unless if affects your ability to continue making the payments.
Opening a cafe would also be fine. Obviously this is probably more risky than taking a job, and is also likely to leave you with a variable income. There's ways to deal with that though; most trustees will be used to working with clients who run businesses and who are self-employed.
I think you should speak to your Trustee about the café plan beforehand though, Amylou92, just to ensure there are no crossed wires. Your dad buying a lease/fixtures/fittings/machinery etc for you could be seen as you having acquired an asset during your Trust Deed, which could cause complications as any such assets technically convey to your trustee.
It may be more sensible for everything to stay in your father's name initially, until after your Trust Deed is finished.
He owns the building so it would be a case of renting (once funds allow) the area off of him. He would own everything I would just own the business if that makes sense lol. But yea it being in he’s name and just having him pay me a wage for the duration of trust deed would certainly be an option
