I knew before I signed that my trustee would take any awards of ppi that I manage to get but how does this work?
I got a statement from my trustee that I was to pay £8000, I had paid £2500 so I had £5500 left to pay. I was awarded £2100 for ppi and my trustee said that would be paid to my creditors. Does this mean it comes off the £5500 I'm still due? So decreasing the amount of payments to be made?

No. It would be in addition to your agreed monthly contributions, resulting in a higher dividend for creditors.
