Paid last payment to trust deed this month, how long after this do we have to declair any windfalls or additional income? e.g I only work term time and I have the chance of a summer job (July & August)would I have to declair this income?

Congratulations on having made your final trust deed payment.
All being well you will have received confirmation of your discharge before the income for the summer job comes in, though I doubt it would be any kind of issue anyway.
